Weekend Food

A out-of-town guest stays for brunch, and I make snacks for a night in with the girls...




Tofu scramble with baked sweet potato home fries: local tofu, soy sausage, spinach, chickpeas, mushrooms, earth balance, onions, garlic, tahini, tamari, red chile flakes, rosemary, oregano, basil, thyme. Sweet potato, olive oil, sea salt. Obviously, this was all covered in ketchup the second after I took the photo.





Brownies from Joy of Vegan Baking were moist and fluffy-- more of the cake-y variety-- and nearly fat-free. Still looking for the elusive fudge-type brownie veganized...









Sundried Tomato Dip from Veganomicon is simple and delicious if not super photogenic.

Jillian - i know this is a comment on a year old post but, just in case you are Still hunting a vegan fudgy brownie, I think i may have found it for you, as I have been on the same hunt myself for quite some time. I saw Emeril on his new show "Emeril Green" bake up this brownie recipe and made it myself the next day. What I did differently - i left out the vegan chocolate chips to make it fat free, i used white whole wheat flour instead of rice flour because its what i had (and i love gluten haha), and i baked it a little less time to make it extra fudgy! I also baked it in a glass pan - the recipe doesn't specify this part i don't believe. Let me know if you make it and what you think. I've made it many times since my first attempt and still am hooked and convinced its the best vegan brownie recipe out there:)

try dreena's fudgy brownies from vive le vegan! SO GOOD, so fudgy!! they were just what i was looking for when i craved classic fudgelike brownies
