Wow. That looks good. How are the green plantains prepared? Fried, just added raw? I have only cooked with them a very few times.
They were pretty green, and I added them raw and cooked them for a while before I added everything else. Maybe with a bit of water even.Thanks for the comment!

that looks amazing. i miss plantains. scotland isn't really prime plantain-growing climate...maybe i'll try it with one of the fancy sweet-ish potato varieties we have here.
