Curried plantains



Curried plantains: green plantains, chickpeas, grated unsweetened coconut, broccoli, tomatoes, garlic, onion, yellow curry powder, red chile flakes, allspice, oil, salt.

Wow. That looks good. How are the green plantains prepared? Fried, just added raw? I have only cooked with them a very few times.

They were pretty green, and I added them raw and cooked them for a while before I added everything else. Maybe with a bit of water even.

Woah, this looks killer. I've also had trouble with plantains before, but maybe I'll give them another shot.

that looks amazing. i miss plantains. scotland isn't really prime plantain-growing climate...maybe i'll try it with one of the fancy sweet-ish potato varieties we have here.
